Appleize

DENMARK - 2016

Appleize is a powder obtained by drying and milling apple pomace. It has a light brown colour, a slight taste of apples and a hint of sweetness. Because of its small particle size, Appleize provides a smooth mouthfeel and unlocks fruity aromas.

Appleize consists of dried and milled apple pomace. It is used as an ingredient in baking and cooking and helps to increase nutritional value of a product in an easy way. Apple pomace is a free industrial by-product that otherwise would go to waste or animal feed but Appleize transforms it into a high value powder with several health benefits. Appleize adresses many needs: pomace suppliers get rid of their waste for free, it is based on sustainable resources and it helps the consumer to include more fibres and antioxidants in their diet. Appleize supports and facilitates that by providing recipes and scientifically proven nutritional information through social media. Appleize targets curious young people who enjoy home-made bakery and cooking. As a functional food, it offers a more pleasant way to improve their diet than traditional supplements. Not only the consumer service, application and usage of pomace are innovative but also the processing: Appleize is produced with pre-drying to save energy in the freeze-drying step for an optimal balance between product quality and sustainable energy consumption. Besides, the process is designed to lower the levels of potentially harmful cyanogenic glycosides to negligible concentrations in order to provide a safe product. Appleize is packed into re-sealable zip-lock pouches and has a shelf life of two years, thanks to the low water activity. The product is sold online through the company’s own webpage, and later in online retail and supermarkets. Distribution is organized in collaboration with a logistics company. The company is owned by the four founders and they are supported by an advisory board with information concerning technological, legal and financial aspects. It has the structure of a private limited company (ApS).
